Many Pagan groups are saying that this number is does not truly reflect that actual number of Pagans in the armed forces.

Phil Ryder of the British Druid Network said there are likely more pagans in the armed forces than the figures indicate.

“Druids and followers of Wicca tend not to publicize their beliefs for fear of discrimination. In some areas it’s seen as odd,” he said.

It amazes me that today we are still ashamed of whom we are, and that are afraid of repercussions for being true to ourselves.

I have done it myself put religion nil or just spiritual for the fear of being seen as wacky.

I have also felt the pressure of working in a Christian organisation each and everyday someone trying to make me believe in Jesus Christ sad thing is I think he was a good guy Circle of 13 and performed magick you tell me who has the right view?

So why do we hide our pagan selves are we really ashamed of what we believe or live in fear of what others may do.

I think the true reason is that we don’t have any public role models and we are viewed in the media very badly and often linked with Devil Worship.

School children are still taught that [wikipedia]witches[/wikipedia] are evil or good, not humans practicing a religion.

It about time we changed the view of the pagan, witch and druid at one time we where the centre of the community then we lived on the outsides of the community where we would be visit for help and healing then we where persecuted, murdered and forced into hiding. Its 2010 it about time we stopped hiding and come out of the broom closet.

WHAT is Lycanthropy? The change of manor woman into the form of a wolf, either through magical means, so as to enable him or her to gratify the taste for human flesh, or through judgment of the gods in punishment for some great offence.
This is the popular definition. Truly it consists in a form of madness, such as may be found in most asylums.
Among the ancients this kind of insanity went by the names of Lycanthropy, Kuanthropy, or Boanthropy, because those afflicted with it believed themselves to be turned into wolves, dogs, or cows. But in the North of Europe, as we shall see, the shape of a bear, and in Africa that of a hyæna, were often selected in preference. A mere matter of taste! According to Marcellus Sidetes, of whose poem a fragment exists, men are attacked with this madness chiefly in the beginning of the year, and become most furious in February; retiring for the night to lone cemeteries, and living precisely in the manner of dogs and wolves.
Virgil writes in his eighth Eclogue;
Has herbas, atque hæc Ponto mihi lecta venena
Ipse dedit Moeris; nascuntur plurima Ponto.
His ego sæpe lupum fieri et se conducere sylvis
Moerim, sæpe animas imis excire sepulchris,
Atque satas alio, vidi traducere messes.
And Herodotus:”It seems that the Neuri are sorcerers, if one is to believe the Scythians and the Greeks established in Scythia; for each Neurian changes himself, once in the year, into the form of a wolf, and he continues in that form for several days, after which he resumes his former shape.”(Lib. iv. c. 105.) There is a fixed time for each Neurian, at which they change, if they like, into wolves, and back again into their former condition.”But the most remarkable story among the ancients is that related by Ovid in his “Metamorphoses,” of Lycaon, king of Arcadia, who, entertaining Jupiter one day, set before him a hash of human flesh, to prove his omniscience, whereupon the god transferred him into a wolf:[1]
In vain he attempted to speak; from that very instant
His jaws were be spluttered with foam, and only he thirsted
For blood, as he raged amongst flocks and panted for slaughter.
His vesture was changed into hair, his limbs became crooked;
A wolf,he retains yet large trace of his ancient expression,

Pliny relates from Evanthes, that on the festival of Jupiter Lycæus, one of the family of Antæus was selected by lot, and conducted to the brink of the Arcadian lake. He then hung his clothes on a tree and plunged into the water, whereupon he was transformed into a wolf. Nine years after, if he had not tasted human flesh, he was at liberty to swim back and resume his former shape, which had in the meantime become aged, as though he had worn it for nine years.
Agriopas relates, that Demænetus, having assisted [1. OVID. Met. i. 237; PAUSANIAS, viii. 2, § 1; TZETZE ad Lycoph. 481; ERATOSTH. Catas. i. 8.] at an Arcadian human sacrifice to Jupiter Lycæus, ate of the flesh, and was at once transformed into a wolf, in which shape he prowled about for ten years, after which he recovered his human form, and took part in the Olympic games.
The following story is from Petronius: “My master had gone to Capua to sell some old clothes. I seized the opportunity, and persuaded our guest to bear me company about five miles out of town; for he was a soldier, and as bold as death. We set out about cockcrow, and the moon shone bright as day, when, coming among some monuments. My man began to converse with the stars, whilst I jogged along singing and counting them.
Presently I looked back after him, and saw him strip and lay his clothes by the side of the road. My heart was in my mouth in an instant, I stood like a corpse; when, in a crack, he was turned into a wolf. Don’t think I’m joking: I would not tell you a lie for the finest fortune in the world.
“But   to continue: after he was turned into a wolf, he set up a howl and made straight for the woods. At first I did not know whether I was on my head or my heels; but at last going to take up his clothes, I found them turned into stone. The sweat streamed from me, and I never expected to get over it. Melissa began to wonder why I walked so late. ‘Had you come a little sooner,’ she said, ‘you might at least have lent us a hand; for a wolf broke into the farm and has butchered all our cattle; but though be got off, it was no laughing matter for him, for a servant of ours ran him through with a pike. Hearing this I could not close an eye; but as soon as it was daylight, I ran home like a pedlar that has been eased of his pack. As every one knows, Jupiter changed himself into a bull; Hecuba became a bitch; Actæon a stag; the comrades of Ulysses were transformed into swine; and the daughters of Proetus fled through the fields believing themselves to be cows, and would not allow any one to come near them, lest they should be caught and yoked.
S. Augustine declared, in his De Civitate Dei, that he knew an old woman who was said to turn men into asses by her enchantments.
Apuleius has left us his charming romance of the Golden Ass, in which the hero, through injudicious use of a magical salve, is transformed into that long−eared animal.
It is to be observed that the chief seat of Lycanthropy was Arcadia, and it has been very plausibly suggested that the cause might he traced to the following circumstance:
The natives were a pastoral people, and would consequently suffer very severely from the attacks and depredations of wolves. They would naturally institute a sacrifice to obtain deliverance from this pest, and security for their flocks. This sacrifice consisted in the offering of a child, and it was instituted by Lycaon. From the circumstance of the sacrifice being human, and from the peculiarity of the name of its originator, rose the myth.
But, on the other hand, the story is far too widely spread for us to attribute it to an accidental origin, or to trace it to a local source.
Half the world believes, or believed in, were−wolves, and they were supposed to haunt the Norwegian forests by those who had never remotely been connected with Arcadia: and the superstition had probably struck deep its roots into the Scandinavian and Teutonic minds, ages before Lycaon existed; and we have only to glance at Oriental literature, to see it as firmly engrafted in the imagination of the Easterns.

The Seven Hermitic Laws

3dec2syns4 150x150 The Seven Hermitic LawsAs I a bit of a science geek as well as being a Witch when I came across the 7 hermitic laws I was fascinated on how these 7 basic rules applied to life the universe and the principles of [wikipedia] magick [/wikipedia]. The [wikipedia] seven Hermitic laws [/wikipedia] are; Mentalism, Correspondence, Vibration, Polarity, Rhythm, Cause and Effect and finally Gender.

From my point of view these laws can, when applied together correctly can produce outstanding results. The laws themselves have long drawn out explanations so I have come up with a simple one line statement and explanation.

1st Law “Mentalism

The god is the mind; the universe is the mental projection.

For me this means that everything can be perceived or imagined can become real and we all have the power since we are all part of the divine force which gives us the power of the gods. All you need is to declare yourself a god/dess then you are a god/dess.

2nd Law “Correspondence

As above so below, as below so above,

This is a weird one as it can be taken in lots of ways, but for me it a reminder that everything is inter-connected. Nothing is separate everything belongs to something else if something is removed then the whole ceases to insist. 

3rd Law “Vibration”

Nothing rests, everything moves everything vibrates.

This one for me is relies on quantum physics and the understanding that even at the smallest particle is in motion and that the motions causes a vibration at a sub atomic level.

4th Law “Polarity

Everything is dual everything has a pole & opposite

Polarity for me is easy to comprehend I just have to think of a magnet it is equally negative and positive and if that balance shifts then it stops being a magnet- this law is basically is everything has its equal and opposite.

5th “Rhythm”

Everything flows everything has tides all things rise & fall

In its basic form everything has a beat, rhythm or ebb and flow. These rhythms are easy to detect the heartbeat, the pulse of a quartz crystal, the ebb and flow of the tide are easy to detect but some rhythms are very slow or very fast that they are over looked or dismissed such as the rhythms of the seasons or the rhythm of a electron flowing around a nuclei.

6th Law “Cause & Effect”

Every cause has an effect & every effect has a cause

For me this law reminds me to be ethical in magickal and daily life. And the everything has an equal and opposite reaction, when casting a spell for what ever reason their will be a reaction. I can explain this with an analogy “be careful for what you wish for you just might get it”

7th Law “Gender”

Gender is everything, everything is masculine & feminine gender manifest on all plane.

This is the final reminder that sexual values such as male and female are ways to divide things in two, and by polarizing gender we upset the vibration of the true whole. In everything is both male and female although this balance is not always equal as explained by the play write [wikipedia] Aristophanes [/wikipedia] in the Origins of Love (see youtube video below.)

The hermitic laws are studied in greater details in [wikipedia] Hermeticism [/wikipedia] or the [wikipedia] Western Hermetic Tradition [/wikipedia] is a set of philosophical and religious beliefs or [wikipedia] gnosis [/wikipedia] based primarily upon the [wikipedia] Hellenistic [/wikipedia] Egyptian pseudepigraphical writings attributed to [wikipedia] Hermes [/wikipedia] [wikipedia] Trismegistus [/wikipedia] who is the representation of the conflation of the Egyptian god [wikipedia] Thoth [/wikipedia] with the Greek Hermes. These beliefs have heavily influenced the Western Esoteric Tradition and were considered to be of great importance during the Renaissance

Mental Health in the pagan life

real witch 150x150 Mental Health in the pagan lifeFor each of us life is a journey for some it is an easier journey and for others it a difficult one. Now it can be a tricky situation for a coven or group that has a person who suffers from a mental illness. One of the main reasons is that a person with a mental illness can have their ups and downs, which can cause minor disruption to a group meeting due to their non-attendance.

Now mental illness still has a very negative image in public and private life and it is people’s own fears, which cause most of the issues. Now many people do not understand much about mental health and that lack of understanding causes prejudice. The fact is that many off us will experience a period of mental illness in our lives the most common of these being depression.

For pagans and witches we know that the body and mind can become unbalanced and with the correct herbs and medications the body can be returned to health but very few pagans and witches have the understanding to deal with mental imbalance and like most people shy away from mental illness.

But the sad thing is, we as pagans and witches are truly skilled at assisting people with mental illness. As pagans and witches we should be more open to assisting mental health now I know that the PF does healthcare support work but although it mentions disability it does not mental health or mental disability.

I think this is more to do with the public option of mental health and witchcraft I can remember a client when I worked in mental health going to see a psychologist for a minor mental health problem during the session the client talked through their problems shared some of the personal beliefs which where pagan after the session the psychologist wrote in the report client lives in a fantasy world of gods and demons. Their minor issues was blown up from a simple illness requiring talking therapy and maybe some anti depressives in to a large scale mental illness filled with delusions and although it was quickly halted the person still has on their file lives in a fantasy world.

The ignorance of personal beliefs and mental health can cause great distress to both the professional and the client. Only by understanding can we put to bed our fears over mental health. We have to learn that mental illness and the people who suffer from them are more than capable of having a “Normal” life.

Now I know many pagans who have a mental illness who work tirelessly at helping others with their issues but nearly all of them work within social care or health and hide behind their job many fearing to expose them selves as pagans.

The main problem with mental illness is that it cannot be seen or explained clearly and no one really knows how one contracts a mental illness so it’s a bit scary for most. Over the last few years’ mental health as taken a role in trying to get other to understand that people with mental health issues can live very productive lives in fact many famous TV and film stars have come forward saying Hi yes I am a Star but I also suffer from …(depression, bi-polar etc). Hans Christian Anderson, Ludwig Von Beethoven, Winston Churchill, Kurt Cobain, Charles Darwin, Emily Dickenson, Thomas Edison, F. Scott Fitzgerald, Betty Ford, Paul Gauguin, King George III, Johan Goethe, Ernest Hemingway, Victor Hugo, Ignatius of Loyola, Thomas Jefferson, John Keats, Abraham Lincoln, Martin Luther, Michelangelo, Florence Nightingale, King Saul, Robert Louis Stevenson, Sir Isaac Newton.

Now I know many pagan paths will come up with the excuse that people with mental health problems have energy that just not conducive to magickal or ritual working those are the same groups that would not let gays attend for the same reasons.

No I am not saying let your local paranoid Schizophrenia patient with a knife fetish join your circle what I am saying is don’t dismissed them without asking a few questions such as how do your symptoms manifest? is their any sign we should look for? What should we do if you start to become ill?

As pagans witches group and coven leaders we are responsible for our group and our community and the world at large, it is the way we treat people that set us apart from others.

Now not matter what path you follow your ethics will set down how you should behave and I am sure not one pagan path actively discriminates against a persons disability or gender or sexual orientation in this day and age and if there is they will soon die off and be replaced with a off shoot doing the correct thing. But I am not sure if any group promotes support for the mentally ill or has a set of ethics that helps coven leaders or group leaders deal with mental health so I have come up with a set of ethics, which can be used.

Ethics for those wishing to join with mental heath issues.

  1. This group is open to accepting persons with mental heal problems
  2. Those joining with mental health problems are required to inform the “HP or elder” of their illness including but not limited to-
    1. Diagnosis of illness
    2. Symptoms that indicate a cycle of the illness
    3. A list of things that need to be done if illness recurs.
  3. HP or elder will meet with the new member to discuss any issues at least once per month.
  4. New members are required to inform HP or elder when things begin to get tough.
  5. During the first year the new member is required to inform the whole group of their illness and share their experiences good and bad.
  6. Progression through the coven will be done at a pace that suits the needs and support level of the member.
  7. Any member causing distress to another member will be disciplined within group guidelines.

Just because some has a label of having a mental illness it should not define them as being mental I sure if one of the famous people above wanted to join your group you would not say no. People with mental health problems can make great witches, pagans or anything else they choose to be.

A theory Karma and Science

karma 150x150 A theory Karma and ScienceKarma as permeated it self in today modern society and in neo paganism as the idea that our actions have results positive and negative allowing us to receive reward or punishment depending on the out come of our actions but karma is much more than that.

Karma is not a faith it is a concept an ideal from India it is based on the idea that we are eternal souls seeking perfection and understanding so we can in a sense ascend to a higher stage spiritually.

Unlike some beliefs where you born then die and are judge on your actions either receiving paradise or pain. Karma allows you to experience many lives and experiences clocking up negative and positive points along the way.

I was once taught that only when we leave this physical form, we regain all the information we have gained over our many life’s and we view our actions and choose to return (be reborn) to balance our good and bad deeds, we choose the family we are born into, the area and circumstances we belief that will be conducive to help us undo the negative Karma we collected in our last life(s) and once we become physical again through birth we lose all knowledge of why we are here what we came to learn and as humans we blunder through this life making more mistakes adding more bad karma to our souls.

Through meditation and spiritual practice we can access our higher self and seek guidance from within about what choice and action we should be making but we are required to make the choices that face us.

This Concept of karma has always fascinated me and although not a scientist I have always been interested in science and physics and in how things work. Could explain why I am solitary and eclectic I like to experiment.

The idea of science and religion working together has always been a difficult one for some religions as they see it as a way of unmaking their god and truth is if science continues it will be the undoing for some major religions.

I personally believe that the pagan and neo pagan belief system will continue as at the heart of our belief is energies and we even accept that our deities are embodiments of ideals and manifest in energy and we accept that our deities are part of something bigger something beyond our understanding at present.

We are a part of the universe and the universe is part of us the micro verse and macro verse. Science has proved that energies exist and is finding new ones as we continue there are even particles that will behave the way you expect them to if they are being observed begging the question what are they doing when not being watched? Science has proved that life is energy and when that life end the energy stops to (or changes). Science has told us we are made of carbon and that a carbon atom has a half-life of 5,730 years ± 40 years.

So with the basic facts science has taught us we know we are energy, we know we are made from an atom that can be 5730 years old and there are particles that we will never know what they are truly doing because the moment we watch they do what we hope they will do.

The idea of this eternal learning this constant striving to become perfect through experience seem sensible, in this life we have regrets or missed opportunities what if we had to live every choice and it out come Well science has a theory for that it believes that the are millions of universes existing in multiple dimensions at the same time all based on different variation through minor changes.

What if Karma existed within the rules of science well you would experience the same life millions of time with only minor differences from each other in one life you turn left, in another you turn right, so in this theory your higher self is in all place and in all times, now that sounds like the role of a god (the idea that we are all our own god and goddess is nothing new to pagans). It only when our energy ends can we return to the whole, here is where it can get difficult! when does our energy end is it when the shell stop working? when we are lo longer remembered? when the last of our carbon atoms give up? well I don’t know I would like to believe that it our need to change that directs pills online without prescription us to experience new things and new lives.

The biggest problem with ideals is they are open to interpretation and own values I see myself as a person who has a library (although i dont a have the keys to unlock it yet) of knowledge that has 5730 years of knowledge and experience that hold the information of past and future lives in every carbon atom in my being and the atoms are shared with every one on the planet since we all share the same thing we are all the same, I know that this physical body one day will cease working and will be burnt or buried releasing more of my atoms I know my energy will transform to what I don’t know and don’t care that for then not now.

The second part of Karma is the clocking up of positive and negative Karma well this is basic hermitic principles of cause and effect every action has an equal and opposite reaction sometime these happen quickly instant Karma or without you noticing or even after many years the effects of you actions will catch up to you. Well is we take the scientific approach and think of the multi-verse and that we are in all place at all times it could explain why some people have such bad luck their action in other dimension echo through to this one causing bad karma for this existence. The same way bad people seem to be so lucky it just a way of the universes keeping in balance.

This is how i see karma a spiritual ideal which can be reinforced with science the problem with science and belief is understanding your understanding and theirs most times they dont match anyway it my theory it how i make sence of it.

You can either let the candles burn out by themselves, or snuff them in reverse order and let them burn a little each night if the person will be on an extended trip. On the last night let them burn down on their own. NEVER blow our or pinch out the candles. This destroys the luck.

Pagan 150x150 ParaphernaliaI can remember when I was first starting that I wanted all the best tools but money was an issues so I used to troll around car boot sales, charity shops and flea market trying to find things that I could use for my alter. You will quite surprised on what you can pick up for just a few quid.

Over the years I have replaced all my second had stuff with brand new stuff and some of it is more pretty that practical (who does not have a chalice with a loose liner) but it makes me think what tools do you really need? To be really honest you don’t really need any tools, fingers can replace wands and athames and a chalice can be replaced by cup etc.

You can spend thousands of pounds buying robes; alter statues, [wikipedia]wands[/wikipedia], [wikipedia]athames[/wikipedia], Chalices, Crystals to dress your [wikipedia]altar[/wikipedia], pots and dishes and [wikipedia]cauldrons[/wikipedia] and pointless things like hand bound virgin parchment paper leather bound book of shadows but having expensive tools does not make you a good witch or even a competent witch. When building your tools worry more about what feels like than what it looks like, just remember to cleanse second hand items full before use.

So what do you need for a basic alter from my point of view a candle and a joss stick works fine but if want to add more to that then you can. Here are some ideas for low cost replacements to expensive altar equipment.

I have found that I have better rituals with altar equipment that I have created myself they may not be the prettiest but they have all the energy that I poured into them when made them.

A good idea is to join a pottery class and make what you need. Remember that no one has the right to tell you should not put something on your alter create what you feel is right for yourself.

When your first trying out a pagan path there are two very good reasons why you should create your own personal tools rather than buy direct from a catalogue or internet shop, the first is it will help you empower the items with greater ease due to your personal connection the second is paganism is not for everyone and why spend a fortune on something your not going to continue.

There is one thing that never seems to get mentioned in regards to altars and that a tape deck MP3 Player or CD player as music is important in raising energy I will chat about music in rituals in next posting, but insure what ever technology you use to play your music just make sure it is ease to control and that you can pause and play with out to much trouble.

Tetragrammaton

tetract2 150x150 TetragrammatonOften seen written within the magical circles or pentagrams, Tetragrammaton truly means for letters. The four letters that Tetragrammaton relates to Four letters from the Hebrew alphabets that are used to form the divine name.

Yod-ye-vau-he (YHWH) and signifying Yahweh. It is pronounced in Hebrew as “Adomai,” and written generally as JHYH with variations of JHVH or YHVH when spoken in English is pronounced Jehovah.

Their entomology of YHWH is HWH, (he-vau-he), which means being, life or woman in the corresponding letters in Greek, meaning Eve, giving the inner meaning of Tetragrammaton as mother of all living things.

The Tetragrammaton had two versions. EHYH, the lesser-known one, comes from Hayya, another one of Eve’s many names, which designates the Goddess in her special connection to women in childbirth. On Samaritan phylacteries the male and female versions of the Tetragrammaton were intertwined.

The Tetragrammaton is used predominantly by Gnostics and those that studied the Kabbalah and still to some extent is associated with the male deity or the name of God.

The Tetragrammaton is used in Magic’s to summon angels and high spirits and is used in Enochian magic a highly overcomplicated form of ritual magic. Enochian magic forms the backbone of both the Crowley and Golden Dawn systems of magic. The use of the Tetragrammaton while remains in the domain of ceremonial Magic’s. It has made its way into the public domain and symbols in horror films, jewellery and T-shirts, as well as the odd heavy metal rock album cover. The major reason I feel that many do not use the Tetragrammaton in Magic’s is basically due to the over complications of rituals and the secrecy and symbology that lies behind them. If you are interested in using the Tetragrammaton it is advisable to begin learning. The Kabbalah and reading through books, like the golden dawn, or even Alistair’s own books of Magic.

The four letters of the Tetragrammaton pronounced Jehovah can be rearranged to produce 12 correspondences relating to the 12 tribes of Israel, the 12 astrological zodiac signs and 12 Angels and by changing a letter will also create new names, and the correspondences. These can be seen in the Kabbalistic tree of life.

4 3/4 cups all-purpose flour (4 3/4 to 5 1/4)
1/3 cup wheat germ
1/3 cup sugar
2 packages Yeast
2 teaspoons Fines Herbes*
1 1/2 teaspoons salt
1/2 teaspoon onion powder
3/4 cup water
3/4 cup milk
1/4 cup butter or margarine cut into buy doxycycline online pieces
2 large eggs
1 tablespoon water

In large bowl, combine 1 1/2 cups flour, wheat germ, sugar, un-dissolved yeast, fines herbes, salt, and onion powder. Heat 3/4 cup water, milk, and butter until very warm (120=B0 to 130=B0F); stir into dry ingredients.

Stir in 1 egg and enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 4 to 6 minutes. Cover; let rest on floured surface 10 minutes.

Divide dough into 18 equal pieces. Divide each again into 3 equal pieces; roll into smooth balls. Place 3 balls in each section of 18 greased 2 1/2-inch muffin pan cups. Cover; let rise in warm, draft-free place until doubled in size, about 30 to 45 minutes.

Beat remaining egg with 1 tablespoon water; brush on rolls. Bake at 400=B0F for 12 to 15 minutes or until done. Remove from cups; let cool on wire racks.

*Or use 1/2 teaspoon each: Thyme (leaves), Oregano (leaves), Sweet Basil, and Marjoram

Elder Flower Fritters

(Medieval England, recipe courtesy Ororo)

1 egg

1 cup self-rising flour

1 teaspoon Rose Water

1/4 teaspoon cinnamon

1/4 cup honey

2 cups elder flowers, freshly picked & cleaned

2 tablespoons brandy

Mix the egg, rose water, honey, & brandy in a medium sized bowl. Stir in the flour & cinnamon; the batter should resemble slightly thick pancake batter. If the batter is too thin, add a little more flour; if too thick, add more brandy. Fold in the elder flowers. Fry like pancakes or drop by the teaspoon into a deep-fat-fryer until golden brown. Serve with a sprinkling of orange water & fresh lemon, or dip into fresh sweet cream. Yield: About 2 dozen Note: If you are not using self-rising flour, add 1 teaspoon baking powder & 1/2 teaspoon salt. Variation: If you can’t find elder flowers, substitute 1 cup finely diced apples & a hint of fresh mint for similar magical effects. Magical Attributes:

Tart on Ember Day
from Ancient Cookery

7 ounces cheese strongly flavoured cheese
4 medium onions = 1 lb
1/3 c parsley
2 Tsp fresh sage or 1 1/2 t dried
3 Tsp butter
4 eggs
1 Tsp sugar
1 tsp cinnamon
1/4 tsp ginger
4 Tsp currants
9 ” pie crust

Chop the onions and boil 10 minutes, drain. Grate cheese. Mix everything and put in piecrust.

The original version: Parboil onions, and sage, and parsley and hew them small, then take good fat cheese, and bray it, and do thereto eggs, and temper it up therewith, and do thereto butter and sugar, and raisyngs of corince, and powder of ginger, and of canel, medel all this well together, and do it in a coffin, and bake it uncovered, and serve it forth.

Egg Custard

1 quart milk
4 large eggs
1/4 tsp. Salt
3/4 cup sugar
1 tsp. Vanilla
nutmeg

Scald milk in heavy pan – do not boil!  Thoroughly beat eggs, adding salt and sugar.  Beat a little of the hot milk into the egg mixture, stirring constantly.  Pour egg mixture hot milk, stirring well.  Slowly bring just to a boil until mixture coats a wooden spoon.  Remove from heat and beat until cool.  Add vanilla sprinkle with nutmeg and chill well.

Cannariculi (Honey Cookies)

4 cups flour
1 cup Marsala wine
2 large eggs
4 tsp. Sugar
1 pinch salt
Oil for deep frying

Honey

Make a well in flour in mixing bowl or on work surface.  Add wine, eggs, sugar, and salt.  Mix well, until thoroughly blended.  Knead dough vigorously until smooth and glossy.  If using processor, continue mixing for at least 1 minute after ingredients are combined.  Roll dough to an 1/8″ thickness or less.  Cut dough into 2″ squares, starting with 1 corner, roll each square of dough loosely on the diagonal to form a pastry roll about the thickness of a pencil.  Meanwhile, heat oil for deep frying.  Fry batches of pastries in hot oil until golden brown, being careful not to crowd pan.  Use a slotted spoon to remove fried pastries from oil.  Drain on paper towels.  Transfer to serving platter.  Drizzle honey over top or dip Cannariculi into honey.

Liebkuchen (Honey Cakes)

1 cup margarine
1 cup sugar
1 egg
1 cup honey
1 cup sour milk* (For sour milk, add 1 Tbsp. vinegar to 1 cup milk and let stand for 10 minutes)
6 cups flour
1 1/2 tsp salt
1 tsp. ground ginger
1/2 tsp. Mace
1 Tbsp. cinnamon

Prepare sour milk and mix dry ingredients.  Set both aside.  Cream margarine and sugar, add egg, and beat until light.  Add honey, sour milk, and vinegar.  Add dry ingredients.  Mix thoroughly.  Chill 1 hour.  Roll out to 1/4″ thickness.  Cut into 2″x3″ rectangles and place on buttered cookie sheets.  Bake at 375° for 6 minutes.  Frost with plain vanilla frosting.

Granny’s Irish Scones

16 oz. self-rising flour
4 oz. Margarine
3 oz. Sugar
milk

2 eggs
5 oz. raisins or currants
1 tsp. baking powder

   Mix flour and margarine together with your fingers until the mixture is fine; add sugar, raisins and baking powder.  Beat eggs and add.  Pour in enough milk to make mixture into a sticky dough (not too wet).  Lift out onto a floured board and flatten out to 1 1/2″ thickness and cut out scones with a biscuit cutter.  Place 6 on a greased baking sheet and brush tops wit ha little beaten egg (this helps them to brown).  Bake 15 minutes in a preheated 400° oven.
